Super Soup is a great wintertime meal-type soup.

Super Soup

  • 1 tbs Olive Oil
  • 1 lg Onion coarsely chopped
  • 2 -3 turnips, peeled and chopped
  • 4 carrots chopped
  • 3-4 cloves garlic sliced
  • 1 cup lentils, any type.
  • About 5 cups kale, chopped
  • 6 cups stock or water
  • 1 tbs turmeric
  • 1 tsp cinnamon
  • S&P to taste

In a big pot, heat the oil to medium high. Add the onions, turnips and carrots and cook just until tender and starting to brown – about 5 minutes. Add the garlic and cook just a minute more – until you can really smell that garlic!

Remove the veggies from the pot and set aside.

Add the 6 cups stock or water to the pot & bring to a boil. Add the lentils, turmeric, cinnamon, salt & pepper and simmer 25-30 minutes, until the lentils are tender.

Add everything into the pot and heat through – about the time it will take the kale to wilt and get tender, about 5 minutes. Taste to see if it needs more S&P.

Serve as is or with a chunk of artisan bread, or over brown rice.
